It's been a while since we hosted a class about Rome, the so-called eternal city, where so many classic Italian dishes come from. So we're excited for tonight's class!
When you arrive, you'll enjoy a favourite Roman street food called pizza rossa. Thin, crunchy and highly addictive, it's a staple snack at traditional bakeries like Roscioli and Campo de' Fiori - and luckily, it's not too difficult to make :)
Next we'll prepare one of the most delicious - and controversial - pasta dishes in all of Italy: spaghetti alla carbonara! Roman tempers often flair over the "correct" cooking method, the "authentic" historical ingredients, and even the origins and name of this dish. Tonight we'll resolve these questions once and for all!
Another Roman classic on tonight's menu is saltimbocca alla romana, which literally means "jump in your mouth" - the name of this dish says everything you need to know about it's rich flavour. We'll be paring it with peperonata alla romana, a slow roasted pepper and potato stew, and spinaci alla romana (sautéed spinach with pine nuts and raisins).
The spinach dish, like the crostata di ricotta e visciole we'll be baking for dessert, comes from the Roman-Jewish community whose origins date back to antiquity, making it one of the oldest Jewish settlements in Europe and a major influence on Roman cuisine in general.

Pizza rossa - Thin and crunchy, roman style "red pizza" with tomato and oregano
Spaghetti alla carbonara – Spaghetti tossed in egg yolk, pecorino, guanciale and black pepper
Saltimbocca alla romana - Veal scaloppine with prosciutto and sage
Peperonata alla romana - Sweet pepper and potato stew with olives, capers and herbs
Spinaci saltati con pinoli e uvetta - Sautéed spinach with pine nut and raisins
Crostata di ricotta e visciole - Ricotta and sour cherry crostata

We also offer corkage, the fee is $15 per bottle.
