ABOUT TONIGHT'S CLASS
We often talk about Italian dishes being regional, and it's true, historically the cuisine (like the language and culture) differed from one area to another, and it still does today. But like every rule, there are exceptions. History's a little more complicated than the stories we tell about it.
Take melanzane alla parmigiana (eggplant parmesan) for example. Some say it's from Naples, others from Sicily. And the truth is, dishes made with fried eggplant, tomato, mozzarella and grated cheese are found all over South Italy. So who really owns the dish?
The same goes for fritelle - ie. fritters, whether sweet or savoury; or patate al forno (herb-roasted potatoes); or vegetables prepared gratinati (with bread-crumbs and grated cheese). You find these dishes all over the peninsula and well beyond. It's hard to really say where or when the come from. But what we can say is that they're delcious and we don't really need an excuse to share them with you!
That's what our "Classic" series is all about! Dishes everyone knows and loves, that may not fit into neat "regional" categories, but are just too good for us not to share with you. So instead of overthinking it ... let's just roll up our sleeves and get cooking!
When we're done, everyone will sit down at a big harvest table and enjoy the fruits of our labours.

Fritelle gamberi - Shrimp fritters

Melanzane alla parmigiana - Layers of fried eggplant, fresh mozzarella, Parmigiano-Reggiano, tomoato and fresh basil, baked to sizzling, caramelized perfection
Secondo e contorni
Scaloppine al marsala - Veal cutlets cooked in wine, herbs and Marsala wine
Patate al forno - Soft on the inside, crispy on the outside: perfect roast potatoes with garlic and herbs
Peperoni gratinati - Roasted, lightly breaded sweet peppers, with capers, garlic and fresh herbs
Zucchine scapece - Zesty fried zucchini marinated with white wine vinegar and mint
Dolce
Bigne alla crema - Also known as zeppule di San Giuseppe, fried chous pastry stuffed with pastry cream.

We also offer corkage, the fee is $15 per bottle.
