About this experience

TONIGHT'S CLASS

Join us for the winter edition of our Sicilian cooking series! Tonight we'll make some heartier dishes from the region that are perfect to enjoy this time of year.

We'll be making Timballo, the famous drum-shaped baked pasta from Trapani; a slow cooked braised rabbit with olives and herbs; deliciously decadent (and deep fried) dessert ravioli stuffed with ricotta and chocolate; and a few of the sweet-and-sour types of vegetable dishes so typically of the region.

When we're done cooking, you'll be seated with fellow guests at a harvest table to enjoy the meal we've prepared together, served by our staff.

A NOTE ABOUT SICILY

Sicily is the largest island in the Mediterranean, and thanks to its complex history boasts one of the richest and most diverse cuisines in the region.

Originally settled by the Greeks in the BC era, Sicily was under Arab rule from the ninth to eleventh centuries, and over the years since has taken many culinary influences from the Normans, Spanish, North Africans, and the island's own substantial Jewish population.

The resulting fusion of spices, fresh produce and seafood, cooking techniques like "agrodolce" - and some of the best street foods in Italy - make Sicilian cooking truly unique!

MENU

Focaccia di semolina - Semolina focaccia with herbs and olives

Timballo di anelletti - The king of Sicilian baked pasta dishes, made with ringed anelletti pasta, ragu, eggplant, cheese and prosciutto cotto

Coniglio alle olive nere e rosmarino - Braised rabbit (or chicken) with olives and rosemary

Melanzane a beccafico - Eggplant involtini with pine nuts, raisins and herbs

Cipolline in agrodolce - Sweet and sour baby onions

Cassatelle di Carnevale - Ravioli dolci or "sweet ravioli", stuffed with ricotta, orange and chocolate
