Welcome to the next instalment our series Roman Classics series!
When you arrive, you'll enjoy a favourite Roman street food called pizza bianca. Thin, crunchy and highly addictive, it's a staple snack at traditional bakeries like Roscioli and Campo de' Fiori - and luckily, it's not too difficult to make :)
Next we'll be making two great pasta dishes that are very similar in ingredients but quite different in taste: pasta alla gricia and pasta all'amatriciana! These delicious trattoria style dishes show you don't need a lot of fancy ingredients or equipment to master the fundamentals Roman cooking.
For the main course, we'll enjoy dishes that show both northern and southern influences on Roman cooking: a Tuscan style braised chicken (similar to Cacciatora) but cooked in peppers, tomatoes and capers, more typical of Naples and other places in South Italy. We'll pair it with Parmigiano-flavoured patate sabbiose (Northern influence) and cicoria ripassata (Southern influence).
Crostata di ricotta e visciole, which we'll be making for dessert, comes from the Roman-Jewish community whose origins date back to antiquity, making it one of the oldest Jewish settlements in Europe and a major influence on Roman cuisine in general.
When we're done cooking these great dishes, you'll be seated with fellow guests at a harvest table to enjoy the meal we've prepared together, served by our staff!

Pizza bianca with mortadella - Thin and crunchy, roman style pizza stuffed with mortadella (and optional cheese)
Pasta alla gricia - Spaghetti with tomato, pecorino, and guanciale
Bucatini all'amatriciana - Bucatini with pecorino, guanciale and black pepper
Pollo ai peperoni - Braised chicken with shepherd peppers, tomato, capers and herbs
Patate sabbiose - Au gratin style potatoes with breadcrumbs and Parmigiano
Cicoria ripassata - Chicory sautéed with garlic and chili peppers
Crostata di ricotta e visciole - Ricotta and sour cherry crostata

We also offer corkage, the fee is $15 per bottle.
