Join chef Bruno di Sarno and Cucinato owner Mark Cirillo, and their sons Salvatore and Massimo, for a fun, laid back, family friendly cooking class to celebrate Father’s Day!
We asked the boys what they wanted to make for today’s class and predictably they said pizza, homemade pasta, and BBQ – a nice light lunch – so that’s what we’re going to make! It might sound like a lot but don’t worry, we’ll keep the cooking part simple, so the dads don’t have to work too hard. And we’ll treat it like a tasting menu so all those carbs don’t completely knock dad out on his special day (though a post lunch siesta is highly recommended)!
About the meal
Before we get cooking, Bruno will treat us to one of his favourite snacks from his hometown of Naples: pizza fritta (fried pizza). We’ll serve a batch of these bit-sized spuntini paired with your choice of prosecco, Peroni or a non-alcoholic beverage before getting started.
Then it’s time to make homemade pasta! You might find the combination of pasta and potatoes surprising, but trust us, Southern Italian pasta e patate is delicious, especially with provola cheese – just ask 13-year-old Salvatore, who chose it for today’s first course! The magic of this dish is in the sauce – the creaminess of cooked down potatoes and the stretchiness and smokiness of the provola. If that sounds little exotic for you or your dad, not to worry. Massimo (aged 12) has chosen the perennial favourite for our second primo: homemade Calabrese pasta with tomato sauce.
Next, with summer just around the corner, we’re going to fire up the BBQ and show you how to prepare an Italian style grigliata mista (mixed grill) – a platter of mixed meats and veggies, served family style. And last but not least, we’ll finish things off with a refreshing summer sweet: caffe del nonno (“grandpa’s coffee”) made with semi-frozen cream and espresso (or for the kids, Nutella).
Hope to see you there!
MENU
Pizza fritta in due modi
Two types of Neapolitan style deep fried pizza: one with ricotta & salami, the other with tomato and mozzarella – Bruno’s favourite!
Pasta, patate e provola
Another Neapolitan classic: homemade semolina pasta with potatoes and smoked provola cheese – Salvatore’s favourite!
Fileja al pomodoro
Since we’re making batch of semolina pasta, we’ll also make some Calabrese style fileja with a simple tomato and basil sauce – Massimo’s favourite!
Grigliata mista
After the pasta course we’ll fire up a classic Italian mixed grill – with a bit of steak, lamb speducci, chicken, and some veggies (whatever’s freshest when we do our morning shopping)
Caffe del nonno
Let’s not forget our grandfathers on Father’s Day! In honour of nonno Vincenzo and Giovanni, this semi-frozen, frothy, coffee-infused dessert – from South Italy, of course! - is the perfect way to wrap up today’s meal!
