Ripasso is a special vinification technique traditional of the Valpolicella region. Few months after the fermentation the wine is left in contact with the skins of the dried grapes used for the production of Amarone. In this way, the resulting wine gains greater structure and complexity.
Pairing - Risotto ai funghi, aged and spicy cheese, beef roasts
Tasting Notes - Intense fruity notes of ripe cherry, plum and subtle oak spice. In the mouth it is well balanced, silky texture, with medium body and a firm tannin finish. Open half an hour before drinking to enjoy it fully.
