On arrival, we'll start with a fresh baked Calabrian style focaccia, stuffed with Swiss chard and dill. Then it's time roll up our sleeves and make fresh pasta for the first course!  \u003c\/p\u003e\n\u003cp\u003eThe star ingredient tonight is the tomato: we'll use them to make the sauce for our fresh pasta (\u003cstrong\u003ecavatieddi con pomodori gratinati\u003c\/strong\u003e), and as a base for the sauce for the main course, \u003cstrong\u003epollo con melanzane. \u003c\/strong\u003eThis slow cooked, succulent main course melds the flavours of the garden into a delicious sauce, which pairs perfectly with a classic Calabrian homestyle contorno: \u003cstrong\u003epatate fritte\u003c\/strong\u003e (crispy fried potatoes with shepherd peppers). Finishing off the plate, we'll make fresh salad of mixed bitter greens and lemon vinaigrette. \u003c\/p\u003e\n\u003cp\u003eLastly, dessert: we'll be making \u003cstrong\u003ehomemade ricotta gelato\u003c\/strong\u003e, infused with the classic Southern Italian bitter, Strega, and served with freshly baked \u003cstrong\u003eamaretti cookies\u003c\/strong\u003e. The agriculture of the warmer lower terrain is famous for citrus fruits, figs, olives, grapes, peppers, eggplants and more.
