Every old town in Italy has its own hearty, nutritious farmer's soup, and the ingredients will always change depending on the produce available at the time, and the nonna who's making it.
It always starts with soffritto (which literally means something fried) - usually onions, carrots and celery sautéed in olive oil, some herbs, and then legumes and cereal are layered in and slowly cooked, resulting in a healthy, balanced meal.
This soup is made of a delicious blend of beans, lentils and chickpeas combined with orzo (barley), a typical Northern Italian grain.
