Preserving fresh, in-season tomatoes to enjoy all year long is a quintessential Italian tradition. If you’ve ever wanted to try it yourself, here’s your chance to learn!
Join us for a special Sunday morning preserving class with chef Luciano Schipano, who will share his family recipe for making passata di pomodoro – the fresh tomato purée sauce you’ll find in every Italian cantina!
Over a mid-morning breakfast Luciano will explain the preserving process and divide the class into stations to wash, cut and lightly cook the tomatoes before we break for a simple lunch. After lunch, we will jar the tomatoes and tidy up, before guest leaves with 3 litres of their very own, hand-made passata!
AGENDA FOR THE DAY
10:00 – 10:15 am – Colazione
A light Italian-style breakfast with coffee, orange juice, biscotti, fresh bread and marmellata
10:15 – 12:00 pm – Preparing the Tomatoes
Group divides into teams for washing, cutting, and heating the tomatoes.
12:00 – 1:15 pm – Pranzo
While the prepared tomatoes are left to drain, guests will enjoy a light lunch of penne and tomato sauce, served with meatballs & salad.
1.15 – 2:00 pm – Jarring the tomatoes
Time to mill and jar the tomatoes, before tidying up and taking them home to enjoy!
