Chef Stefano Agositini, a third generation fishmonger from the town of Valdagno in the Veneto region of Northern Italy, has put together this elegant menu featuring regional classics like risotto alla pescatora (fisherman’s risotto) and spigola in crosta di patate (delicately baked sea bass, finely wrapped in scalloped potato and herbs).
