Join artisanal pasta-maker Giulio Muratori for a hands-on class where you will make dishes with two ancient grains: spelt (or farro) and khorasan (kamut).
Giulio works exclusively with locally produced, organic grains that are better for your health, and kinder to the planet, than white, bleached and processed flours often used in commercial pasta making.
Popular in Italy, delicious, nutrient-riche spelt and kamut pastas are just beginning to catch on here in North America. Spelt has minimal gluten, so it’s a great alternative for many people with insensitivities to white flour. And while Kamut has higher gluten levels that spelt, it’s more water soluble than commercial white flour, making it easier to digest.
But just as importantly, spelt and kamut flours make fantastic tasting homemade pasta!
In addition to the two types of pasta, Giulio will show you how to make two delicious, healthy sauces that compliment the natural flavours of the grains: an arugula pesto, and a lentil-based vegetarian stew. At the end of the class we’ll sit down together and enjoy the food we’ve made!
