Tartufi del Nord: Northern Italian Truffle Dinner

In the northern Italian region of Piemonte where chef Valentina Giorcelli grew up, Autumn is truffle season. And Piemonte is famed for having the finest tartufi in all of Italy.
Tonight’s menu features some of Valentina’s favourite home dishes, like Risotto al Parmigiano and Brasato al Barolo (named after one of the regions many iconic wines). And of course truffles – white, black, preserved in olive oil or cream or even chocolate – will be centre stage throughout this four-course meal.
Sfoglie con caciocavallo e tartufo nero – savoury pastry with caciocavallo cheese and truffle, with anchovy-black truffle spread
Frittata al tartufo nero – Black truffle frittata
Insalata finocchi e arancia – Fennel and orange salad
Risotto al Parmigiano – Parmigiano-Reggiano risotto with white truffle shavings and drops of black truffle mousse

Brasato al Barolo – Piemonte-style braised beef, slow-cooked in red wine
Purè di patate e sedano rapa – Potato, celeriac & garlic mash with white truffle
Rapini aglio, olio e peperoncino
Tiramisù al tartufo – Mini tiramisù with shaved truffle chocolate
WINE / CORKAGE
A selection of Italian wine will be available for purchase during the class. If you would like to bring your own wine there is a $15 corkage fee.
ABOUT VALENTINA GIORCELLI
Valentina Giorcelli is a personal chef, culinary instructor and food consultant from Northern Italy, now based in Toronto. She’s the former corporate chef at Nella Cucina, and founder of Foodies’ Place cooking school in Milan.
