Special Event: Italian Renaissance Dinner – SOLD OUT

Cucinato is pleased to present this special culinary event in collaboration with Istituto Italiano di Cultura, Toronto. It’s part of the 3rd annual “Settimana della Cucina Italiana nel Mondo” (World Italian Food Week), an international initiative by the Italian Ministry of Foreign Affairs promoting quality Italian gastronomy.
Join us for this special event that will take you back to the Italian Renaissance, hosted by internationally renowned author, professor, food historian, and culinary instructor Karima Moyer-Nocchi, our guest chef for this evening’s meal.
In her own words, Dr. Moyer-Nocchi’s passion is to “take [historical] recipes apart, scrutinize the bits and pieces, and then put them back together, breathing new life into them and broadening your perspective about Italian food through the ages.”
To construct tonight’s 7-dish tasting menu she has drawn on seminal Renaissance works like Scappi’s Opera (1570) and Castelvetro’s The Fruit, Herbs and Vegetables of Italy (1614).
Dr. Moyer-Nocchi will give a brief presentation about Italian Renaissance cuisine prior to the meal, and during the course of the meal she’ll explain the role of each of the 7 dishes in the evolution of Italian foodways.
First course (Credenza)
Mostaccioli – homemade savoury/sweet spiced biscuits
Uova ripiene – Stuffed boiled eggs with cheese and greens
Pane Coppia Ferrarese – Homemade traditional bread, typical of the Ferrara region
Second course (Primo servizio da cucina)
Third course (Primo Piatto)
Maccheroni alla romana
Fourth course (Secondo, Contorni)
Pollo Fritto – Fried marinated chicken
Melanzane con erba – Eggplant with herbs
Fifth course (Dolce)
Torta di frutta secca
WINE / CORKAGE
A selection of Italian wine will be available for purchase during the class. If you would like to bring your own wine there is a $15 corkage fee.
About Karima Moyer-Nocchi
Karima Moyer-Nocchi is a culinary historian and tenured professor at the University of Siena. Her research explores the affective, political, and economic implications of culinary traditions in Italian history. She lectures internationally about issues related to Italian food history as well as holding classes and demonstrations about the preparation of historical dishes.
