Mare e Vino: Italian Wine & Seafood Pairing Dinner

The warmer weather and longer days have got us thinking about the sunny coastal regions of Italy – it’s as good an excuse as any to host a delicious wine and seafood pairing dinner, prepared by chef Stefano Agostini!

Stefano, who comes from Vicenza in the northern region of Veneto, is our resident seafood expert – he’s a classically trained chef but also the owner of Pescheria Agostini, a third generation fish monger business founded by his grandfather nearly a century ago.

Stefano will prepare a multi-course meal featuring classic Italian seafood dishes from various Italian regions. Each course will be paired with a different Italian wine variety selected by expert Gaia Massai, who will give you a introduction to the wines as they are served.

Antipasti

Frittelle di baccalà in salsa verde – cod croquettes with garlic, herb and anchovy salsa
Sarde a beccafico – traditional Sicilian dish of baked sardines rolled in pine nuts, herbs and breadcrumbs
Crudo di Branzino all’arancia e finocchio – Raw branzino with orange and fennel
Braciole di melanzane – Fried eggplant rolls with cheese and herbs, cooked in tomato sauce

Wine pairing: Mare Chiaro Cirò Bianco DOC (White)
Obtained from Greco Bianco grapes along the eastern coast of Calabria, this crisp white shows a tropical and fruity nose with a slightly savoury finish reminiscent of the seaside.

Risotto ai gamberi e piselli – Risotto with shrimp and fresh peas

Wine Pairing: Bellaria Oltre Greco di Tufo DOCG 2017 (White)
Pleasant fruity notes of apple, melon and pear Williams with a fine mineral and minty finish. Balanced and refreshing wine from Campania.

Cacciucco – Tuscan fish stew (octopus, mussels, shrimp, clams and tomatoes)

Wine pairing: Castelli del Grevepesa Clemente VII Chianti Classico DOCG 2015 (Toscana; Red)
This Chianti presents warm and inviting notes of smoke, ripe dark cherries and a hint of greenness. Medium bodied with smooth and silky tannins

Secondo & Contorni

Involtini di pesce spada alla Siciliana con caponata – Breaded swordfish rolls served with caponata (eggplant, olives, onion, celery and tomato)
Zucchine trifolate – pan cooked, lightly seasoned zucchini
Misticanza – Roman-style mixed green salad

Wine pairing: Planeta Frappato di Vittoria 2016 (Sicilia; Red).
Produced near the sea on the southern part of Sicily, this 100% Frappato red has the typical candied violet nose with much red fruit and balsamic notes in the mouth

Dolce

Cassata – traditional Southern Italian pound cake layered with fruit and ricotta
