Cooking Class: Tastes of Puglia with Massimo Bruno

Massimo Bruno invites you to discover one of the most “Mediterranean” parts in all of Italy, a medley of Greek, French and Spanish influences: his home region of Puglia!

Tonight we’ll learn how to make a classic Pugliese pasta style, cavatelli, perfectly paired with oven-roasted tomatoes. We’ll also prepare the region’s signature vegetable dish, rapini sautéed with garlic and peppers, and some lesser known specialties like the simple, delicious – and gluten free! – torta di ricotta. When the class if over we’ll sit down and enjoy the meal together.

Massimo will make some of his signature focaccia barese (Puglia’s favourite street food) to snack on while we cook.

Roasted pepper rolls

Homemade cavatelli with oven roasted tomatoes

Baked chicken cutlet with pepper and mushroom

Rapini with garlic and hot peppers

Torta di Ricotta (flourless ricotta lemon cake) & espresso


A selection of wines from Puglia will be available for purchase. Or you can bring your own wine for a $15 per bottle corkage fee.
