Cooking Class: Homemade Ravioli with chef Agostini

Ravioli is Italy’s oldest and most beloved form of stuffed pasta: it originated in Northern Italy nearly 1,000 years ago, and not long after gained popularity all over the Italian peninsula.

So it’s not surprising there are so many variations from all over the Italian peninsula. But the general principle is always the same: an egg pasta, a simple filling that’s the “star” of the dish, and a an even simpler sauce that complements (but never overwhelms) the pasta and filling.

In tonights’s hand-on, interactive class, chefs Stefano Agostini and Cosimo Ieraci will show you how to make ravioli from scratch, as well as two traditional stuffings:

Spinach and ricotta, served with tomato sauces

Braised lamb with mint, served with a butter & sage sauce

At the end of the class, we’ll sit down to enjoy the ravioli we’ve made, along with a few sides we’ll make to accompany them.
