Cheesemaker Dinner Event with Angelo Pelosi, Mauro Ritacca & Gaia Massai

Cucinato is pleased to welcome master cheesemaker Angelo Pelosi (of Quality Cheese in Vaughan), who will be making fresh mozzarella on-site during this fun, informative dinner event. Here’s your chance to see in person how mozzarella is made, and taste it at it’s freshest!

Collaborating with Angelo will be chef Mauro Ritacca, who has put together a delicious four-course menu that demonstrates the diversity of pasta filata, southern Italy’s most famous cheese. (Mozzarella, provolone, caciocavallo and scamorza are all types of pasta fillata cheese).

Your host for the evening is culinary expert Gaia Massai, who frequently lectures on the history and culture of Italian cuisine at places like York University, the Italian Institute of Culture, and the Columbus Centre. Gaia will share stories of the origins of pasta fillata, it’s many uses in Italian cuisine, and some tips for how to enjoy the many varieties of this delicious, distinctively Italian cheese.

Antipasti

Tagliere di antipasti (cured meats, preserved vegetables, olives and taralli) served with Angelo’s fresh-spun nodini di mozzarella

Caprese decostruito – a “deconstructed” caprese salad showcasing Angelo’s fresh bocconcini, served with cherry tomato, extra virgin olive oil and sea salt

Pizza margherita – the original mozzarella pizza: fior di latte, tomato and basil. Basta cosi

Primo

Pasta alla norma – Sicilian pasta dish made with eggplant, tomato and cheese. Tonight Mauro will be making it with caciocallo cheese.

Secondo

Involtini di Vitello con Scarmoza Affumicata, Asapargi di Primavera e verdure grigliate – Veal rolls with smoked scamorza cheese; seasonal asparagus; and grilled vegetables.

Dolce

Seadas Sardo – Traditional Sardinian dessert – stuffed semolina pastry with cheese, honey and lemon.

Wine / Corkage 

A selection of Italian wines will be available for purchase with the meal. Or if you would like to bring your own wine there is a $15 corkage fee.
